Our Story & Values

Formerly a 16th century fortified farmhouse, our luxury, family-run masseria is just a short distance from the crystalline Adriatic sea. Today, we're the home of the Puglian lifestyle at its finest.

From the tower to the olives groves, our masseria is full of history. Masseria Torre Coccaro's whitewashed tower dates back to the 16th century, when it was one in a line of defense of towers protecting our land from the invading Saracens. On the terrace of the tower, you can find the old pigeon tower used for sending messages during the wars.

A century later, the Ortus Conclusus was built: a 17th century vegetable garden, surrounded by fortified walls, where today you can still see the ingenious, ancient methods of irrigation from old wells and channels, taking advantage of the force of gravity. Then, in 1730, our little chapel was constructed. Since then, it has been a point of pilgrimage for the fishermen living in the little coastal village of Savelletri. Even today, more than 300 years later, it still holds mass.

But all these structures are young in comparison to our olive groves, more than 800 years old, and the old olive mill and sheep stables that have stood in the ancient caves on our estate since the year 1000. Today, the masseria is owned and managed by us, the Muolo family, who work our hardest to keep this heritage and history alive.

OUR FUTURE: our family has always been close to the environment and sustainability; country people have always put first the care of the land for generations to come.

We believe in DRY AGRICULTURE using water as little as possible for irrigation of our fields, which also gives a much more intense almost wild flavor to the vegetables and fruit of the farm, the masseria has a thriving vegetable and fruit farm according to season: zucchini, fennel, artichockes, eggplants, radicchio, broccoli, apricots, oranges, mandarines, etc. just to name a few and of course Olive Oil from our 800 years old olive trees

RAINWATER COLLECTION centuries ago the Marquis Palmieri built throughout the property rainwater collection tanks that we have renovated and use for the irrigation system

SEWAGE WATER RECOVERY: all sewage water from the bathroom and kitchen is recovered for irrigation of gardens and crops.

ENERGY SAVING: since long time we use new and high efficency led lights, heating, and electricity supplying in general and we also use solar panels for hot water.

PLASTIC FREE for many years now in the two beaches and in the farm we use recycled paper and of course we do separate rubbish collection (the municipality of Fasano is 70%)

LOCAL AND SEASONAL FOOD: Since the opening we use local suppliers for food ( local fish, meats, dairy) and we use seasonal vegetables and fruits.

LOCAL COMMUNITY: 95% of all the people we employ (about 400 people) are local people who, apart from having international experience know the history and local culture that they share with our guests. For years we have been supporting charity for local communities because we believe that charity should be done close to us.
